Oven: Preheat to 275 degrees F. and place lean side down in pan. Roast uncovered 55-85 minutes per pound and reaches an internal temperature of at least 185 degrees F. Remove and rest 10 minutes before slicing. Pressure Cooker: Cut roast into 2-3 pieces and place in pressure cooker with 1/2 cup water. Set cooker to high pressure for 1 hour (adjust for mini cookers). Natural release for 15 minutes. Remove and pull pork apart. Pressure cookers and ovens vary. Adjust cook time and instructions accordingly. Keep refrigerated.
