Makes approx 24 tacos you will need: 2 lb pork tenderloin, cubed 2 tbsp seasoning 1 cup pineapple juice 1/2 cup lime juice directions: combine all ingredients in a heavy bottom pot. Add just enough water to cover pork. Bring to a boil, then reduce heat and simmer on low for 60-90 minutes or until most of the liquid has evaporated. Stir occasionally. Increase heat to med-high and cook for an additional 10-20 minutes stirring and flipping for an added crust.
